Botanical Description
Kamias (Averrhoa bilimbi) also known as Bilimbi is a small tree that can grow around 10 or even 15 m tall, although it is more typically observed around the heights of 2 to 3 m. The leaves are localized at the tips of branches and arranged in an alternating phyllotaxy and pinnately compound, the leaflets are green and oval or oblong in shape. It is cauliflorous meaning that its inflorescence is borne on its trunk, the inflorescence is paniculated with 5-merous purple-red florets. The flowers eventually develop into a fruit with an ovoid or ellipsoid shape and is light-green or yellow once ripe, the fruit also has a pentagon shaped horizontal cross section.

The fruit is edible and while it could be eaten raw, its intense sour flavor lends it to being used instead as a souring agent for various dishes.
