BS REnt program director Dr Annalisa Mariano-Diaz presents zero-waste framework for restaurants at 8th PRCTH

Dr Annalisa Margarita Mariano-Diaz, director of Ateneo's Bachelor of Science on Restaurant Entrepreneurship program, presented her research, "Toward Zero Waste: A Framework for High-End Restaurants in Metro Manila,” at the 8th Philippine Research Conference on Tourism and Hospitality (PRCTH) on 13 and 14 Nov 2025 at the University of the Philippines, Tacloban, with the theme "Tourism and Hospitality Towards Transformative Sustainability."
Her study offers a practical framework that can guide fine-dining restaurants in adopting stronger sustainability practices. This makes her work especially relevant to chefs and restaurateurs such as Gallery by Chele and Seva whose dedication to sustainable gastronomy continues to shape the Philippine dining landscape.
The conference was graced by Leyte Governor Carlos Jericho L. Petilla, a former professor of Ateneo and proud JGSOM alumnus. Guest speakers from China, New Zealand, USA and France also offered global key insights on the future of sustainable hospitality and tourism.
Dr Shirley Guevarra, Dean of the University of the Philippines' College of Home Economic, and the rest of the UP Diliman Hotel Restaurant and Institutional Management Research Team showed strong academic support for Chef Mariano-Diaz in advancing sustainability in the luxury restaurant industry.
